I first began baking at a very young age with my paternal grandmother in her small council house kitchen in Armadale, West Lothian. While her tastes were simple, she ignited my passion for baking with her signature pancakes and fairy cakes. Even in my early years she was my biggest champion, persuading me, at the age of 12 to move out of my comfort zone to design and bake a fruit cake for my Auntie’s Ruby Wedding Celebration- a venture that to my surprise was a roaring success. Since then I have continued to develop my recipes and skills, with the help of my mother and support of my father and the rest of my family, without whom Collins’ Cakes could not exist today.
