Pruneaux a l’Armagnac // This dish is simplicity at its best, and full of flavour. The taste of Armagnac with dried Agen prunes and vanilla is exquisite. The longer we preserve them, the better - and that’s a year minimum!

Newton Garden is coming to life, and loving the sunshine after the rain. This week there’s much work to be done! Yesterday Fred gave Tom Kitchin, his wife Michaela and their pup Skye a tour of everything, explaining the processes for each of this year’s crops. Quite remarkable that Fred is learning as he goes, but is producing such wonderful herbs, salads and veg for our kitchens. Our connection with the food we eat and serve is so important.
