The wee McCaskies had a great day at the Scottish Craft butchers show winning 4 golds and 3 silvers for new products and in the haggis competition we won the West of Scotland ( 4thyear running ) region and took reserve champion really reenforcing our claim of being producers of Scotland’s most awarded Haggis . One of the products to scoop gold was our deconstructed enchilada - which is proving very popular with our customers. I’m working on a great burger promotion so stay t...uned.
We are recruiting ! We are looking for a full time butchers counter assistant. Responsibilities include : Look after all our customers needs at the counter, Making up orders , Keep the shop clean and tidy . Hours Monday - Friday 9-5.30 ( some Saturdays !) Rate of pay £8.75 per hour
Training provided but retail experience preferred .

Position 2 - Production Chef
We are recruiting for a full time production Chef to join our team . This position will be based in our cooked production area and will involve making our pies , ready meal range and helping our development chef create new exciting meal options . We will probably be introducing shift patterns to increase production hours. Fully qualified chef/cook with experience and qualifications is essential

Position 3- Weekend butchers counter Assistant.

Position 4- Cafe waiting staff .
We are recruiting for a part time serving assistant in our cafe. The job will involve cleaning tables and serving customers and cafe cleaning after cafe closes. Experience preferred but not essential. Like position 2 this job is ideally suited to a student with more hours available in holiday periods .

As you may know already . I do like entering our products to competitions . I do it for 3 main reasons : 1) support the craft butcher organisation that organise , 2) makes me think about developing / improving products and getting validation , 3) bit different from the norm and rather fun.
So today I sent helen off ( last minute , of course ) with new products for the Scottish butchers BBQ and ready in 30 oven meals made with verstegen products .
... Here’s my favourite of the entries . It’s my deconstructed chicken enchilada. I have diced thigh and breast marinaded in a Argentinan style oil marinade, then sautéed some mixed tiny diced peppers and onions , cooled and mixed with the chicken , filled into old el passo flour Tortilla baskets and added a mix of a chilli and sweet tomato sauce topped with cheese mixed with Jalepenos . Spicy 🌶 But very moorish
A variation of classic and ready in 17minutes in the oven. Fingers crossed as id like this to be a big seller - next a beef option .

Feeling very happy this morning . Received news yesterday and we really are up against the big boys ... Scotland food and drink awards - Finalists for best Scotch product ( 100% Scotch ).

The Chefs and front of house staff at Hawksmoor in Edinburgh gathered round to watch me bone a beautiful Hereford Roast and divide into prime steaks. Then it was over to meet the Chefs at l’escargot bleu and L’escargot Blanc - where you can now enjoy the finest aged native breed steaks from McCaskies !

Happy Burn’s everybody! It’s one of our favourite days of the year, for fairly obvious reasons. We love haggis and we love to see other people enjoying our (Scotland’s Most Awarded!) haggis!
