My goal is to educate, motivate and inspire people to make changes to the way they eat. Healthy eating isn’t a goal, it’s a way of life! Basically, I believe in eating good quality fresh food and avoiding convenience and processed food. Lowering your intake of sugar and reducing carbs, along with increasing your intake of protein and healthy fats is essential for weight loss and the key to establishing healthy eating habits.

These are free from processed sugar, and packed full of goodies like chia, sunflower & pumpkin seeds, cacao and your favourite @meridianfoods nut butter. •... Ingredients: 2 heaped scoops of vanilla or chocolate protein powder 2 tbsp. mixed seeds (I used pumpkin and sunflower seeds) 1 tbsp. cacao or cocoa 2 heaped tbsp of nut butter (I used almond & coconut butter) 1 tbsp. chia seeds 1 tsp. cinnamon 1/2 tbsp. honey or maple syrup 1/3 cup warm water – add a little at a time till you get the right consistency Desiccated coconut for rolling • Method: Blend all the ingredients together in a food processor until smooth and the right consistency to roll into small balls. Spread the desiccated coconut over a plate. Roll into balls of your desired size and roll in the desiccated coconut. Cauliflower, courgette & sweet potato fritters. These make a great snack and can be enjoyed hot or cold, will easily keep a few days in the fridge. Versatile with any veg that you have lying around. • • I cooked 1/2 a cauliflower then mashed it up, grated 1 small sweet potato and 1/2 courgette - again you could use whatever veg you like, broccoli, peppers, sweet corn etc then add lightly beaten eggs (2-3 so batter is not too dry not too runny) add whatever seasonings and fry ...about 3mins each side, I cooked 3 in a pan at a time 😋 • • #fritters #cauliflower #sweetpotato #healthysnacking #paleofriendly #vegetarianrecipes #nyoutrition #behealthybehappy

Oat, Quinoa & Pear Granola #homemadeisbest For me, breakfast is the most important meal of the day, it kick starts the metabolism and breaks the overnight fast. If you’re looking for a new healthy start to the day then give this delicious 😋 recipe a try!
Mix the following dry ingredients: 100g uncooked, washed & dried quinoa... 100g wholegrain oats 100g of your favourite seeds (I used pumpkin & sunflower) 1tsp ground cinnamon 1 peeled & diced pear
Heat gently in a pan till melted: 2tbsp honey or maple syrup 2tbsp coconut oil 1tsp vanilla extract 1tbsp water
Pour the liquid over the dry ingredients, mix well, spread thinly over a lined baking tray and bake for 25mins at 120C fan stirring 1/2 way through cooking. Wet & miserable day and 2 kids off school sick 🤢 so it was definitely a day for a bowl of delicious chicken noodle soup. Childhood memories of my mum making me this when I wasn’t well, along with ginger ale & paper dress up doll books. Don’t think the boys would appreciate the paper dolls 😂 • What’s your go to food when you’re not feeling too good? • This was an easy one to make today as I had leftover cooked chicken and a packet of straight to wok rice noodles in the cupboar...d. • 1 diced leek, 1tsp grated ginger, 2 crushed garlic cloves - sauté 8mins in a little olive oil. Add 1ltr chicken stock, shredded chicken, simmer 10 minutes. Add 2tsp tamari (gluten free soy sauce), 1 packet rice noodles cut into small pieces and simmer 2-3 minutes. Have you ever tried a matcha latte before? Matcha is a type of green tea powder that’s especially high in antioxidants. It also contains L-Theanine which has been shown to help increase focus and concentration and it also creates calmness. Sounds like the perfect ingredient to me!!
Matcha has a well-rounded, subtle, earthy flavour. I don’t drink coffee or tea so love an alternative like matcha 🍵!

Look away now if you don’t like mushrooms! Made this delicious #mushroom and #aubergine #coconut curry for a #meatfree mid week meal. • Leftovers today for lunch mopped up with some flatbread. • Fry 1 diced onion, 1/2 aubergine 🍆, 1 red pepper till softened. Mix in 1tblsp curry powder & 2 crushed garlic cloves, 1 tin chopped tomatoes 🍅, 300ml veg stock. Simmer 15mins. Add 1/2 cup coconut milk & 400g button mushrooms. Simmer 8 minutes. Start the day right with OVERNIGHT OATS! I just love waking up to this easy breakfast that’s been prepped the night before. Sooooo easy and sooooo delicious 😋. • Topped with the roasted autumnal fruits I did earlier in the week - 1 sliced nectarine, 1 sliced pear, juice from 1 orange 🍊 toast for 30mins 170C. Then add your favourite berries, lightly drizzle with #maplesyrup and return to the oven for a further 15mins. • #overnightoats 1 cup oats, 1 cup milk of your choice, 1/2... tsp ground cinnamon & ginger, mix well and add to an airtight jar or container in the fridge overnight. This has been the best thing I have ever done, I always thought I ate healthy food but just kept putting on weight, I had given up after so many failed diets, after each attempt I would put even more weight on.
