Starter and Dessert from a very enjoyable 3-course, 40th Birthday dinner at Craggan Mill Lodge, Grantown this evening. Didn't manage to get a pic of the 'Free-range Chicken with braised Cabbage and Dauphinoise' main course. Each pic is captioned. Happy 40th Robbie!!

Loved this dish from earlier in the year. Tandoori Monkfish, crushed Peas, crispy Noodles, fruity Curry Sauce. Colourful and delicious!!

Focus on.............. Canapés! Some lovely, tasty, colourful mouthfuls to get an occasion going. So many options and possibilities. You could request some Canapés to get your next special occasion off to a great start!

Have again had a few occasions when we've had to turn down catering requests due to being booked already. This is a nice problem to have!! However, to avoid disappointment, make sure you get in touch in plenty of time!! Here's a pic of some freshly baked scones.

Focus on.............. Duck. Crispy skin, served nice and pink, delicious taste and a wonderful aroma. What's not to like about a nice Duck dish?! Getting hungry just writing about it!!

Focus on................. The personal touch. Personal involvement in every part of the process, from enquiry to planning and then delivering the event itself. The personal and professional approach makes all the difference. Would you like to have a professional Chef cooking in your house?

Focus on........... Risotto. Such a great dish to cook. Very Versatile, a great accompaniment and a great vehicle for flavour and colour. When made correctly, it is just fantastic!!

Focus on............ Desserts. Certainly not a Pastry Chef but do enjoy making desserts and focusing on fresh, colourful plates of good. Have to say, you can't beat a Lemon Tart!!

Focus on.......... Fish!! Do enjoy working with fish. Such a pleasure to prepare, Cook and serve with lovely accompaniments. Do you like the look of any of these dishes from the archive?

Having never brought a Chef in to cook on site before it was a fairly big decision to take as of course you always hope that family occasions will be memorable and the food the focal point .



So I made contact with a few companies and in the end based on reviews, pics online and the most excellent comms between Alastair & I, I booked.



Every detail was discussed via email, nothing was left unturned and sure enough...



Any worries were rapidly dispelled as Alastair served up dish after dish of pure perfection, from start to finish the Food & Service was amazing.



We were completely at ease having them in our home, they are incredibly professional, friendly and efficient.



Being used to Five star Hotels & Michelin starred Restaurants (Foodie at heart) I can honestly say Alastair & Chantall are right up there if not better than anything you could expect in Scotlands finest Hotels.



I will be recommending to my many Company Director friends and hiring PDS Moray again for all our client dinners / family occasions.

Highly recommend Alistair.. from start to finish He was very professional and the food was amazing .. will definitely be using his services again .

Alistair created this meal in a house with 4 adults, 3 children, two dogs (a husky and a Labrador!), one teenager, with the World Cup and Wimbledon unfolding around him!
