Once upon a time, in early 1800’s, there were 2 chaps - John Booth and Thomas Bates. These 2 chaps were working with the beef dairy Teeswater cattle. Thomas went the dairy route and John went beef. In 1817 animals from his herd came to Scotland and became known as beef Shorthorn, the first registered cattle breed in the world. Still with us? Well how to make this fabulous beef breed even better? Cross it with the traditional Highland cow, of course! Famed for its hardiness a...nd meat quality which is lower in cholesterol than any other type of beef.
So we present Edinvale Farm Highland Shorthorn beef Pure deliciousness

Just 16mths into farming Thorabella Farm are raising and producing delicious buffalo meat.
In June 2018 they said "Best decision we ever made. They are friendly, docile, easily handled and very affectionate. Their meat quality is second to none. Producing a very healthy meat which is low in cholesterol and high in mineral content with less than half the total fat of conventional lean beef. Our herd is ever growing which started at 4 in August 2017 and totalling 14 just now ...with 7 Expecting females over the next 2-6 months. We sell our Meat locally from the Farm which has had a very high response rate in such a short space of time and we plan to keep growing the herd over the years to come to keep up with demand"
This weekend they will have fresh cuts available and you can pre-order for Christmas !

Elchies will have fresh Ryeland hogget and mutton for sale at this Saturday’s market. Ryeland sheep hail from Leominster and are an incredibly gentle matured sheep. Not heard of hogget or know what it is? Then this may help
Hogget is between one and two years old
... Mutton is over two – and it’s best eaten at four years
An easy rule is the darker the colour of the meat, the older the animal will be.
The main difference between mutton and lamb is that mutton tends to have more flavour and a little more fat, but it can be tougher so it benefits from long, slow cooking – it’s particularly suitable for stews (see mutton ragout). The trouble is that mutton has earned itself such a bad name that it can be hard to find.
Which, of all of them, is the best? Tom Parker Bowles puts it best:
“Hogget is simply lamb with wanderlust and a decent education. It’s killed when it’s between twelve and eighteen months old, so it knows a thing or two about flavour. It doesn’t overwhelm like old mutton, yet still bleats with ovine delight.”
Tom Parker Bowles, Let’s Eat Meat
