The Grill by HW is the latest venture by Highland Wagyu. Husband and wife team Mohsin Altajir and Martine Chapman created the Highland Wagyu Company in 2011, to breed pedigree Wagyu beef from their own farm land, set within 25 000 acres of Perthshire. They take pride in breeding what is, in many chef’s opinions, beef that ranks amongst the best in the World. The animals are reared slowly to allow the development of the rich marbling that makes Wagyu beef the most succulent beef on the market. As well as the Wagyu Fullblood, they also produce three distinct cross breeds, Wangus, Waghorn and Waglander, each with its own distinctive flavour, using native breeds sourced from pedigree herds also on their farms.
