So much Christmas baking to do at the moment, I trimmed all of my Christmas Cakes yesterday, so I've got all the offcuts to gobble up... sorry... I mean quality control πŸ˜‰πŸ™Š perfect along with a cup of spiced masala chai (I decided that having a whisky with my cake at 11.00 this morning *might* be detrimental to my overall productivity today πŸ˜‚πŸ€”

Christmas themed bakes with the boys today, we had lots of fun making Double Chocolate Cupcakes and decorating them. I've never made the Christmas Tree πŸŽ„ style before due to the sheer quantity of icing on them - even with the upturned ice cream cone as a support it's still a lot. Lucas made and predominantly demolished his before telling me it was too much icing (Alex just demolished his cake without icing it - nothing unusual there). So in the end we just made two Christmas trees and I'll decorate the balance of the cakes as wreaths when I get the chance! @ Oxford, Oxfordshire

Hip hip hooray!! πŸ˜„ After trying numerous different flour combinations I think I'm finally there with my gluten free version of my Moist Spiced Apple Muffins! (phew πŸ™„ I was beginning to worry I'd never get the texture right!) I do think I need to increase the spices slightly though. Does anyone else find changing gluten containing recipes that use sweet spices to gluten free can dull the flavour of the spices? I did intend to take a picture of one of the individual muffins, but they somehow all got eaten before that happened... Ooops πŸ™Š

Orders baked for the day and deliveries made... so I won't say 'no' to a spare slice (or two) of Salted Coconut Caramel Brownie whilst I prepare dinner - after all it is one of my favourites... I do seem to say that about a lot of my bakes, but I guess I'm just fickle when it comes to sweet treats πŸ˜‚πŸ™Š

I love thick creamy soups and one soup that I'm never able to have as it always seems to have added dairy is Artichoke Soup, so I finally got around to adding some Jerusalem Artichokes to my @ocadouk shop this week and made some myself. Such a quick and simple soup, with no pre roasting of vegetables required. I do use a soup maker as I love smooth soups and the soup maker makes it so quick and easy to make beautiful creamy soups. I started by sautΓ©ing a couple of onions, the...n added chopped celery (I find celery such a great flavour addition in so many things), also added the peeled and chopped stalk from a head of broccoli (because I had it in the fridge) , peeled and chopped my Jerusalem Artichokes and added those along with some vegetable stock and some sage and parsley. Allowed it all to simmer until nicely cooked and then blended it. 🍡 Yum! I've already added Artichokes to my next ocado order πŸ˜„

I love Christmassy foods, and candied peels are definitely on the list for me! I had just started on a batch of fruit cakes when I realised I was out of peel so a quick batch was in order (the trick with making candied peel is not eating all of it before you've used it for the baked goods that you're making it for!) Candied peels are far simpler to make than you might imagine, use the peels of unwaxed organic citrus (I just made lemon, but orange and grapefruit are also delic...ious). Chop them into strips, and boil for 5 minutes, throw away the water. Cover with fresh water and boil for another 5 minutes and throw away the water. Set the peels aside. Put 2 cups water and 2 cups sugar into the pan and bring to a gentle boil, add the sliced peels, allow to boil gently for about an hour until the syrup is considerably reduced. Remove peels onto wire rack, you can use the leftover syrup for cocktails, cooking etc as desired.

We're all getting into the Christmas spirit and we made our first family Gingerbread House - Lucas had lots of fun with my icing pen and I even managed to relinquish control and let him ice it as he wanted! πŸ˜‰ We probably won't be winning any prizes for decorating, but it certainly tasted good - in fact Alex didn't actually decorate any of his biscuits, he just ate them as soon as they went in front of him...ah well you can't win them all! πŸ™„πŸ™‰ @ Oxford, Oxfordshire

I've still got a bit of a way to go before it's finished, but I've been having fun recreating one of my favourite cup and saucer sets out of sugar to top a cake I'm making this week. One of the very first cakes I made when I was starting out as 'CakeAways' was a tea set and it has remained one of my favourite cakes to this day.

Stacks of Belgian Chocolate Chunk Brownies and Ginger Muffins for the school bake sale today, after all we had to make sure the gluten free and vegan options were covered! 😊 I may have kept aside a cheeky slice or two (or three) for quality control purposes which I am now enjoying with a lovely almondy latte. I was honestly planning to share with hubby, but he got home so shattered he went straight to bed... aaah well, you snooze - you lose! πŸ˜‚πŸ˜΄πŸ™Š

What a grim day! Nothing like warm ginger cakes and cups of lovely almondy hot chocolate to cheer up a miserable and rainy day - I think we all deserved them after a very cold and wet walk home from school this afternoon! Days like today are definitely made for snuggles on the sofa and movie time. ☺️

Happiness is a slice of freshly baked Lemon Drizzle Cake enjoyed in peace and quiet once the little ones are in bed (yes, I 'might' have taken a bite before I took the picture πŸ™Š)! 😊 I like to bake extras when I have big orders just incase I'm unhappy with how anything turns out and it also means I can quality control my bakes... it's a hard life, but happily I had a lovely friend of mine come over this morning to help me eat cake and put the world to rights! πŸ˜‰

Mmmmm... Zesty Lemon πŸ‹ Shortbread, because well it's hard to go wrong with lemon based bakes! I love the extra tang the zest and the simple lemon icing give to this shortbread. Gluten free and Vegan, made with @freeefoods flour which I love as my standard gf baking flour, though I have ordered some cassava flour to trial as that's something I haven't tried before, so quite excited about that! πŸ˜„

I was covering a cake with marzipan today, and as I'd got the marzipan out, it seemed rude not to use it up (granted I'd probably normally just eat the leftover... πŸ€«πŸ™Š) but anyway I decided to make these excessively moreish Mince-ipan Pillows (I'm still working on the name πŸ˜‚) I always loved my mum's Marzipan topped Mince Pies, so I decided to just take it one step further and cut out the pastry entirely. I cut thin disks of Marzipan which I sandwiched around my mincemeat (basically like making ravioli - maybe I could call them Mince-ioli? πŸ€”) I baked them in a hot oven for about 5 minutes - super simple and delicious especially if you're a marzipan addict like me! ☺️ @ Oxford, Oxfordshire

I'm still working on my Spiced Apple Cake to make it work gluten free, and it's definitely a better texture and you get all the lovely spice flavours, but we're still not quite there... πŸ€” However, I was never one to give up easily, and I do get to eat all the trial bakes (I must be fairly close to eating my five a day! 🍎🍏) ! 🀭

Today has definitely been a winning at parenting day! I've done baking with the boys, built castles and train tracks, done colouring, puzzles and read books as well as taking them to the park for a couple of hours (where my feet went numb with the cold). They ate all their dinner, didn't have any melt downs, and helped me to tidy up! Then they went to bed without a peep (did I bring the wrong children back from the park I wonder?! πŸ™Š) Having got them to bed and feeling very pl...eased with myself, I went to my cupboard to get the ingredients for @searchingforspice amazing Caramelised Pecans which I have been looking forward to all day! So you can imagine my horror when I discovered I had about three sad pecans at the bottom of my packet! 😳 After some deliberation I decided to go ahead and use Walnuts instead, I toasted them as per her instructions and I used Maple Syrup 🍁 instead of honey and also added a bit of Cinnamon and a grind of sea salt at the end. WOW! They are delicious and they really are so quick and simple - something tells me I'll be making these a lot - I've practically polished off today's batch already (thankfully hubby doesn't use social media, so as long as I wash the pan before he gets home he'll never know that he missed out! πŸ˜‰

Sarah made the most amazing cake for my daughter's baby shower yesterday. She gave us lots of different design ideas and the end result far exceeded our expectations. Everybody took lots of pictures and it almost seemed a shame to cut it. If we hadn't, we wouldn't have tasted the delicious sponge and buttercream filling inside. We will definitely be asking Sarah to make more cakes for us.
