Celebrating local produce and the English love of these lil guys we have a released a drink dedicated to them: @blackcowvodka infused with strawberries, a strawberry syrup, strawberry tea and a splash of citrus are washed with milk and clarified to make a light and fresh take on strawberries and cream. 31/07/1970 Was the last day The royal British navy were issued with a daily rum ration, Black tot day. Today marks that anniversary. To celebrate we have a special treat for you at The Plotting Parlour. We have a bottle of the very rum that was issued on that day. Come and taste a little bit of history with us.

We have some pretty special spirits at The Plotting Parlour including seriously posh Tequila. Once considered a hard-core shot tequila is fast becoming a discerning drinkers favorite.
Patron Piedra is produced from 100% Blue Weber agave, grown in the Jalisco highlands, which is crushed in the traditional Tahona process. Aged for three years in a combination of new American and French oak, this is an exceptional example of aged Tequila.

225 people helped foot stomp, basket press & transfer this wine to oak for maturation, tasting it along the way. Each of them has their names printed on a different bottle, somewhere out there in the world are 10 bottles with only their name on it.
Ripe blueberries and plums and all spice on the nose. Round, juicy, sweet dark fruit on the palate, with plenty of body. Soft vanilla oak, subtle tannins and a warming finish.
Only 2890 bottles of this wine were produced this year.... We have 2 left then it is gone forever.

"English Summer Negroni"
We wanted to celebrate our local vineyards with this one. After all, Sussex does produce some of the finest wine in the world.
Foxhole gin is distilled from grape must leftover from sparkling wine production. We infuse it with some fresh red grapes then stir it down with some of Bolney estates awesome new vermouth. ... For a bitter element we reinfuse Aperol with its primary flavours of orange and rhubarb as well as a little extra gentian to up the bitterness a little. We are calling it Aperol plus! . . .

British Summer time means a whole load of berrys, including the woman herself. This lil number has cake like flavours whilst keeping its bottom surprisingly fresh and dry. With @aviationgin , fresh raspberries, lemon and a Victoria sponge tea.

After we are done making our peach shrub there is still plenty of flavour in those tasty peaches. We blend what is left and dehydrate it into a fruit leather for homemade fruit winders to go with the drink. Waste not want not!

Thursday is prep day at The Plotting Parlour and right now we are making a batch of our peach shrub.
We Slice and slowly macerate peaches in sugar until they are one big juicy mess, then simply blend it with @oldtreebrewery apple cyder vinegar.

The first thing we noticed was the lovely atmosphere in this place. We did book our table for the busiest time in the evening so the drinks did take a little longer but wow! were they worth the wait! Out of this World! We'll definitely be returning.

I found The Plotting Parlour on Trip Advisor listed as one of the best cocktail bars in Brighton. It didn't disappoint. The cocktail menu wasn't extensive, but it went off piste in its selection. Some really unusual choices. The table service is a great attention to detail and the waiters really know their stuff. Happy to describe the intricacies of the ingredients and pass on their preferences. The ambience is fantastic. It has a real laid back speakeasy feel to it. If ever we're in Brighton again it will definitely be revisited. Thoroughly deserving of its reputation.
