Hafan Cerniog Description

Cerniog is a recently converted stone barn set in beautiful countryside in Mid Wales.
Afon (river) Cerniog runs through the garden and animals are all around. We offer a haven, a place to stay and relax. We provide a place to try out many activities, from crafts to meditation, along with good home cooking and comfortable beds. The website will have details of all the activities we offer, with the focus on providing what *you* need from *your* break.
The barn was converted with lots of insulation to preserve the warmth from the Ground Source heating system. We plan on utilising energy from the river at some time - another exciting project. The garden is a work in progress - walls to build from left-over stone; a duck pond perhaps, more little hideaways to relax in. . . .
About us; Bee (Bridget) is a product of the Steiner system - full of creativity and sparkle. She runs groups making rugs, mosaics, wine; the list goes on and will constantly flow with the seasons. She speaks German and an amount of French and plays fiddle in a local Klezmer band.
Rog (Roger) converted the barn - a testament to his varied skills. He will take you walking, dowsing, fixing and meditating - all with a focus on inner awareness.
Together we are RnB. . . ;)

When making damson vodka last night (using the same recipe I posted for sloe or damson gin) I soon discovered that rather soggy defrosted damsons did not easily fit into the neck of a gin bottle, so please accept a correction....use kilner jars or similar with the damsons. Sloes fit most bottles but damsons are too big. I used 12oz sugar, 1lb damsons and one 70 cl bottle of vodka. Lets share results in a few months! If we remember after drinking it! xx

With so many damsons and sloes this year there's no excuse not to make Damson or sloe gin for xmas!
Here's my most successful recipe:
DAMSON OR SLOE GIN... Find a clean, empty 70cl gin bottle (not too difficult!) Half fill with sloes or damsons that have been in the freezer (this method saves you having to prick each berry) Weigh out 6oz sugar Use a funnel to pour into the bottle Top up with gin leaving couple inches at the top Shake vigorously to dissolve sugar Shake gently when ever you think of it Leave at least 3 months Strain and bottle Add pretty label (suggesting it is kept another 3 months!) Makes perfect present in small bottles with a little shot glass from charity shops! Voila!! Xmas nearly sorted!

Finally the perfect Rye/Spelt loaves! Secret ingredient seems to be the black treacle! Here's the recipe for anyone interested:
Spelt and Rye Bread Recipe
1 cup brown spelt flour... 1cup brown rye flour 1cup white spelt flour 1cup white rye flour 2 teasp salt 2 level tablesp dried yeast 1 tablsp black treacle / dissolved in one and a half cups of lukewarm water 1-2 teasp caraway seeds (optional) Mix all the dry ingredients in large bowl. Dissolve the treacle in warm water and add to flour mix. Add extra water if necessary. Knead well and leave to rise in bowl covered with tea towel. Knock back and knead well before putting to rise 2nd time in bread tin. Bake in oven at 200' for aprox 30 mins. ( should sound hollow if tapped)
Enjoy! This bread is great for anyone with only a mild intolerance to normal wheat!
