Simple and easy to prepare in a Crock-Pot slow cooker, this popular middle eastern dish is a hearty vegetarian meal that is sure to warm your cockles.
Left to cook slowly for around 6 hours, you can go about your day knowing that you are coming home to a deliciously flavoursome meal to enjoy.
What You Need
... • 1 red onion, finely sliced • 1 red pepper, diced • 1 green pepper, diced • 6 garlic cloves, crushed • 2 tsp sweet paprika • 1/2 tsp cumin seeds • 1 tsp hot chilli powder • 800g tinned or ripe tomatoes • 1 tbsp sugar • 1 tbsp lemon juice • 4-6 eggs • Small bunch of coriander, chopped
Method
1. Simply add all ingredients except the eggs and coriander to the removable Crock-Pot bowl. 2. Cover with the lid and cook for 4 hours on High, or 5-6 hours on Low. 3. Lift the lid, crack your desired amount of eggs on top, and close the lid again. Allow eggs to cook (around 10-15 minutes for runny yolks) 4. Sprinkle over the coriander and serve with toasted pitta and a little natural yoghurt.
