G L Y K Ó K A R Ŷ D I // with so many nut and fruit trees around Greeks have developed an amazing tradition of #spoondesserts. The are preserved fruit, mostly unripe, preserved as a whole or in thick slices in a syrup. For the walnut version pictured here unripe whole walnut fruit are soaked in water for 20 days to take the bitterness away before they are preserved in s sugar and honey syrup. Spoon desserts are called so because they are served on a spoon usually to accompany strong bitter coffee。But we love them with thick strained yoghurt too. Frutti desert trio which closed our Wasteless #3 dinner at Milk&sugar/llaeth&siwgr. She used surplus bananas, ripe berries, unwanted mandarins past their best before date and some bags of flour from our food saving ventures to make a trio of 🍌 fool, sticky mandarin cake and mini jam doughnuts filled with the berry jam she made for us! Swipe 👈🏼 to see how we served it! Beca Lyne-Pirkis is one of the baker’s dozen in the 4th series of The Great British Bake Off and now cook, food writer and TV presenter. She’s one of our Wasteless Partners and we hope to work with her again soon! On the issue of food waste she says, “The issue of food waste is something that concerns me, and helping to raise awareness around the issue by being part of the next Wasteless Supper is one way of inspiring others to make better use of leftovers as well as drawing attention to the volume of surplus food that happens weekly in Cardiff. C A R I B B E A N & N O R T H A F R I C A N // this is the finished dish of our #caribbean #mango #slaw with #salmon marinated in juice of three citrus fruit with #chermoula inspired spices. A dish that puts a world of flavours on your plate! We shared it on BBC Radio Wales #elerision shoe last year! It is inspired by travels and encounters in Florida where we first tasted a similar slaw. We remembered it last year after reading Romy's Kitchen article about mangos photographed by our friend Gareth Phillips. We’d bought a large box of mangoes (as they were in season), ate mango slaw every day and even learnt to make Romy’s Aamras sauce. #summerfood #fish #globalkitchen #worldflavours #food #goodfood #realfood

MICRO URBAN GARDEN// thanks Green City for tagging us to share a #oneminutegardentour of our #microurbangarden. My highlight as always is Dan Green Photography ‘s stunning micro flower arrangements. I love our cherry tomato basket from Julian, our new neighbour. Herbs have been such a success again this year, #lemonbalm, #applemint #thyme #chocolate mint and so much #oregano. We even had some strawberries and chard from the seedlings we picked at @green_squirrel_cdf seedling swap. And the rose geranium @bex_red gifted me last year is doing so well. The jasmine has also blossomed. Everytime i open the French doors to the garden the herbs and flower scents hit me. Thank you @dangreen for making such a haven for us and the bees. #roath #cardiff #herbs #flowers #bees #edibles

We will be visiting a local farm & heritage apple orchard just ten minutes away from the festival to pick apples, meet Mike & Sian Lewis who will welcome us to their farm and prepare an apple based drink and dish.
