Such a delicious, simple meal. I used small new potatoes, red onion, apple chutney and pork sausages with dried basil with a little stock. Covered with foil. Placed in the oven for 45mins. Served with steamed broccoli. Mmmmmm. You could try different combinations for this dish - Mushrooms and blue cheese. Chicken and leek ... I had lots of questions yesterday following the post of my poached egg lunch. People asked how I managed to get perfect looking eggs. Well these little beauties are my answer. I've had these for over 10 years, practically an heirloom 😂 and they still look like new. I normally drop a little oil in the bottom of each and squish (technical term) the sides together to ensure it's all coated in oil. Crack in the egg. Place in the pan of boiling water. Risotto. Last night I cooked risotto using leftovers of sweetcorn, cooked chicken and carrot. I also put in some dried basil. A really simple, low cost meal which was very filling. I even had a portion left. Other combinations- Peas with 1 shredded courgette. Could top with crispy bacon.... Peas and broad beans or green beans. Simple curry Making a curry from scratch isn't complicated, with a few spices and one or two other ingredients you have a healthy meal for your family. For my unusual basic curry last night I used ingredients from my store cupboard - cumin, turmeric, garam masala, ginger and coconut milk. I added chicken and sweetcorn served with rice. You can add whatever you like, it's YOUR curry. Explore. Experiment.
Potato wedges. We know it's much easier and quicker to grab the bag of frozen chips but actually making your own is really easy and great value for money. There are so many different herbs and spice combinations to add flavour and variety. I used garlic, black pepper and cumin seeds - so many health benefits to boost our immune system.
Potatoes. One of the most popular vegetables in any kitchen and it's probably the one vegetable we throw away most often. Did you know the potato skin has more nutrients than the rest of the potato? Full of B vitamins, vitamin C, iron, calcium as well as potassium. The skin also provides fibre too. Why not try sliced potato instead of mash on top of cottage pie or even fish pie. Less potatoes used and therefore less waste.

We are feeling very happy this morning. We have received the fantastic news that we have been appointed as the food provider for Age UK Cheshire Dementia Day Service in Winsford. We will be providing hot, nutritional meals on a weekly basis going forward.
