Fancy a light, healthy, delicious taste of spring in a bowl (or a mug, or a flask; we're not precious about these things)? The day I make this glorious peppery watercress soup always feels like the first day of spring. A good tip for a bank holiday lunch to impress your chums.
Serves 4
2 85g bags of watercress (remove the thick stalks as much as you can).... 50g butter 2 large leeks, washed and chopped (just the white parts) 2 large potatoes, peeled and chopped into cubes. 1.5 pints vegetable stock salt and pepper
Melt the butter in a large pan (one with a lid) and add the potatoes, leeks and watercress. Turn everything in the melted butter then drop the heat down to the minimum, add a good pinch of sea salt and put the lid on. Try not to let anything brown.
After 10 minutes, add the stock. Bring everything up to a boil, stir, then drop it to a simmer. Add some pepper and leave for about 15-20 minutes. Leave it to cool for about half an hour, then blitz it all to a smooth paste with a handheld electric blender.
Check the seasoning and reheat. Served with a healthy dollop of crème fraîche. Alternatively, you can serve it chilled, ideally while your feet are cooling in a gently running river.

One of our guests who dined with us on Friday the 15th left this rather natty coat behind. Very snazzy torch thing in the pocket. I suspect they might have missed it on the wettest Saturday in years. Tried as many numbers as we could. Please let us know it it’s yours.
