What is your favourite way to eat asparagus? Asparagus belongs to the Lily family and is in season in the UK in May, June and July. It provides a wide variety of nutrients, including potassium, vitamin K, C & A. Asparagus is also rich in B-complex vitamins such as thiamin, riboflavin, folic acid, vitamin B6, and pantothenic acid that are essential for optimum cellular enzymatic and metabolic functions. Asparagus contains inulin which is a special type of carbohydrate called a... polyfructan. Unlike most other carbohydrates, inulin passes undigested all the way to the large intestine where it is an ideal substrate for the β€˜friendly’ bacteria (like Bifidobacteria and Lactobacilli) that live in our gut. Asparagus can have a diuretic effect which is thought to be because of the amino acid asparagine, and when it’s excreted it gives urine a distinctive odour!

I haven’t made this chicken recipe for ages and I had forgotten how delicious it is. It is absolutely packed full of flavour and provides a good hit of vitamin C from the red peppers, vitamin A from the sweet potato and vitamin E from the tahini and peanut butter. Plus the ginger and turmeric have anti-inflammatory properties so this is a super nutritious meal!
