What is your favourite way to eat asparagus? Asparagus belongs to the Lily family and is in season in the UK in May, June and July. It provides a wide variety of nutrients, including potassium, vitamin K, C & A. Asparagus is also rich in B-complex vitamins such as thiamin, riboflavin, folic acid, vitamin B6, and pantothenic acid that are essential for optimum cellular enzymatic and metabolic functions. Asparagus contains inulin which is a special type of carbohydrate called a... polyfructan. Unlike most other carbohydrates, inulin passes undigested all the way to the large intestine where it is an ideal substrate for the βfriendlyβ bacteria (like Bifidobacteria and Lactobacilli) that live in our gut. Asparagus can have a diuretic effect which is thought to be because of the amino acid asparagine, and when itβs excreted it gives urine a distinctive odour!

I havenβt made this chicken recipe for ages and I had forgotten how delicious it is. It is absolutely packed full of flavour and provides a good hit of vitamin C from the red peppers, vitamin A from the sweet potato and vitamin E from the tahini and peanut butter. Plus the ginger and turmeric have anti-inflammatory properties so this is a super nutritious meal!
