Though I don't bake commercially at the moment but I do for family and friends. I just need a reason to do baking. This time it was for easter. Yesterday was Easter celebration at my kid's nursery. So I thought to do Easter theme cupcakes. My kid was very excited. He is my little helper. I like to take help from him. He holds whisker when I put the ingredients, ask me so many questions, play with the timer, peep at the oven glass every now and then to check the bakes. I love to see his tiny little hands do decoration very carefully. And the outcome is this....

Custard Berry tart & tartlets
Ingredients To make puff pastry sheets -
... 2⅓ cups all purpose flour 6 tbsp unsalted butter, softened ⅔ cup cold water 1 tbsp salt Butter Block: ¼ cup all-purpose flour 250 grm unsalted butter (cold)
To make custard - 3 egg yolks 5 tbsp powered sugar 1 tbsp cornflour 1 tbsp butter 1¼ cup full fat milk ¼ tsp vanilla extract

I used the following recipe to make puff pastry sheets.

To make the custard, heat the milk in saucepan on low flame and add the vanilla extract. Try to use the good quality vanilla extract. Meanwhile beat the egg yolks, sugar and cornflour together in a bowl until it become almost white. Then add the hot milk little by little to the bowl making sure you whisk continuously. Once fully mixed transfer all the ingredients back to the saucepan. Then on a medium heat stir continuously with a spoon until it is thick enough. Finally pour the vanilla custard into a bowl, and as it cools stir occasionally to stop a skin from forming. Here your vanilla custard ready.
Now preheat the oven to 220 degrees. Roll the pastry around 3mm thick with lightly floured surface. Cut the round of required size and place it on the parchment-lined baking sheet/tray.
Using the round cutter (smaller than already cut pastry circle), score 1 to 2mm on the center of the pastry without cutting through. (Shown in the uploaded picture). Brush the border with the egg and/or milk. Bake until light golden and puffed, 5 to 10 minutes.
Now press the center circle little inside to make cavity and fill the custard. If not able to press score, use sharp knife around inside circle to make cavity. Fill cutard and put berry on top and bake it again for 5 to 10 min.
Serve hot or cold as you like.

Super soft Lemon cream cheese bundt cake. Anyone would like to try recipe??
Cream Cheese doesn't give any flavour to the cake but it gives nice moist to the cake and is great served alone, with fresh fruit.
... Ingredients - 250 grams all purpose flour plus - 1 ½ teaspoon baking powder plus - ½ teaspoon salt Sieve together
- 160 grams of cream cheese( I used Philadelphia) - 220 grams unsalted butter at room temperature - 200 grams powder sugar Beat until soft
- 1 teaspoon vanilla extract - 1 big lemon rind - 4 large eggs
Directions
Preheat oven at 180 degrees. Grease and flour a bundt pan or 8 inch tin with minimum 3 inch height and set aside. Beat cream cheese, sugar and butter until light and fluffy. Now add lemon ring and essence. Mix well. Add egg one by one and beat it. Once mixed egg properly add sieved flour and baking powder. Beat it on very low speed. Do not over beat it. Bake at 180 degrees until toothpick inserted come out clean.
Let cake cool in the pan for 20-30 minutes before inverting onto cooling rack.
