This hearty vegan dish consists of rice, lentils and macaroni medley, topped with a punchy tomato sauce, chickpeas and crisped to perfection onions. Traditionally Kushari is served from Kushari carts on the street corners of Egypt. In fact Egypt’s ubiquitous Kushari carts serve a social purpose of bringing people together to eat a good value wholesome dish. ‘Kushari cart’ aims to import this culture to the UK-getting people together to eat a ‘no fuss’ tasty wholesome dish.
