Recipe of the month: Fried duck egg with asparagus and truffle fried duck egg recipe provides a lavish breakfast for two. The addition of black truffle adds to the deliciousness of the dish. If preparing this for a vegetarian, replace the Parmesan cheese for a vegetarian alternative. Ingredients 10 asparagus spears, peeled and trimmed... 2 duck eggs 25 of 100% black truffle 20g of Parmesan, finely grated 25ml of double cream sea salt black pepper rapeseed oil Instructions * Blanch the asparagus in heavily salted, boiling water for 1 minute and refresh in ice water. Drain and dry well with paper towel *Add a tsp of rapeseed oil into 2 frying pans. Once the oil is hot, crack the eggs into the pans and fry until the whites are lightly golden *As the eggs are frying, combine the truffle and cream and divide between the two pans.Season with sea salt and cracked black pepper and sprinkle with the Parmesan * Season the blanched asparagus with sea salt, cracked black pepper and rapeseed oil. Place the asparagus under the grill until they are just starting to blacken * Place the pans containing the eggs under the grill for 30 seconds, then remove *To plate, lay the asparagus on the eggs and then top with the watercress. 4 potatoes... 1 1/2 truffle butter (sapori di bosco) salt and pepper Whole black truffle (Sapori di Bosco) q.s. juice of ¬Ĺ lemon grated Grana Padano
Christmas dinner recipes must be special, but special dosen't mean necessarily that you have to spend hours and hours in the kitchen. Better to enjoy family and friends in the hours before midnight. So, here's an idea for a quick and easy Christmas side dish. Dont'you find it extremely sophisticated?
INGREDIENTS: Place the potatoes in a pan full of cold salted water and after the water begins to boil, cook for 15 or 20 minutes. Then drain the potatoes, let them cool slightly, peel and cut into slices about 3-4 mm thick. Melt the butter in a pan and then add the potatoes, turning them gentlyevery now and then until they are brown. Then remove the potatoes from the heat, garnish with shredded or grated the truffle, flavor them with salt, pepper and a handful of grated cheese and season with a few drops of lemon juice. Serve warm. If you want accompany the plate with a Parmesan cheese sauce or with our ready-to-use 100 % truffle (sapori di bosco).
