Making butter & butter milk. Butter to be added to cakes for tomorrow's street food event. The butter milk has since been added to double cream & is sitting at room temperature to become sour cream, this is for adding to the wild game fajitas I'll be making tomorrow. Sour cream to be infused with sweet cicely, hogweed seed & orange zest...

Final vestiges of summer, the land energy feels different, the call of the crow at dusk does too. The angle of the sun is lowering & its light is brighter in the eyes. Common sorrel, Dock, dandelion & chickweed have turned their phases, flowers & seeds no more, they have returned to a, lush green new growth state, autumn approaches. The rain in Leeds hasn't been consistent enough, the mycelial network knows this, my checking of certain locations I know well for fungi proved f...ruitless but I knew they would (the odd Russula & 1 blusher) but I had to check, so I can schedule my forthcoming plans. 30 miles away its a very different story, the fungi are rising, as you will have seen via my recent posts. This evening I picked beautifully sweet & slightly sharp apples, underripe pears (for pickling) & ripe elderberries, autumn approaches. The blackberries are mostly prime, just a few sit unripe but they will ripen within the week & all too quickly they will have gone past their gathering best. The seasonal clock ticks & tocks, the time will fly, as will the geese. What are your plans for the forthcoming harvest? What will you gather before the leaves turn red, russet, golden then brown & tumble earth bound; when you can see into the woods & beyond the trees. It's all rather fungalicious out there at the moment. What with all the fruits n berries & the greens such as dandelions n chickweed n common sorrel experiencing their after flowering n seeding phase, there's so much goodness out there right now & for many months to come. The fungi have been high on my list & they haven't disappointed, I've never seen so many field mushrooms, ever. Scarletina Boletes are fruiting very well, the Penny Buns are just starting, Horse Mushrooms ar...e fairing well & I found do many beefsteak fungi today. The one I picked is probably the most stunning & handsome specimen I've ever found. I found 7 beefsteak in total, all in prime fresh condition, 4 were way high up in their oak trees... Damsons a plenty today too, lucky me. Sloes are heaving on their branches & blackberries too are everywhere. Get your skates on folks, once it's gone its gone & all that will be left will be the shite in the supermarkets.... 😊 🍄🌳

Following on from my previous post. As mentioned, I'd had a great mackerel fishing session & purposefully retained a few more than required to either swap for other treats or just give away. Another van pulled up at the spot where I was fishing later that evening (it was occupied by a father & son on their hols). I popped over to see if they fancied a couple of fish, they did & gave me 2 beers in exchange, bonus. Next morning the guy & his son unloaded a kayak from the roof o...f their van & paddled out to sea. They returned 15 mins later with a crab pot containing 2 large edible crabs - seafood heaven! They exchanged 1 of the crabs with me for 2 more mackerel & gave the other to a local couple they knew. I cooked the crab immediately, 15 mins in salted boiling water & then left to cool naturally. Once cooled I extracted the edible flesh & popped it into the cool box. On Tuesday evening, in Mevagissey, I added the crab to a linguine dish. The bartered crab linguine dish was lovely... Fishy fun in Cornwall. Bonanza night on Sunday, pulled up at a, not so quaint cove, a very untypical Cornish fishing port but looks can be deceiving... The bay had instant deep water access & that is always good for a range of fish, particularly mackerel. Cue one of the funnest fishing sessions I've had to date, light tackle, a single lure & hungry mackerel! I had approx 16 fish over a 1.5 hour period, 3 were of a very good size indeed. I kept 8, some for me & others to eithe...r trade or give away. I swapped 4 of them for 2 beers & a fresh caught crab 🦀 (more about that later). I cooked two up that night, ended up filleting & pan frying, I'd lost my firepit grill & it was dark & hunger was immense. The remaining 2 I kept on ice & on Monday we stayed on a campsite (showers were much needed), this also left plenty time to prepare for a fire to cook my fish over. I chose to parnass the fish, a technique I used to use at a local river after catching wild brown trout, its creative, resourceful & fun. Parnassing involves the removal of the central spinal column & all other bones: the fish is butterflied but kept intact (see pictures). The opened fish is, then placed between a split branch, in this instance I used hawthorn, the end of the branch is held together with twine, string etc & the fish is splayed out using twigs to look like a fishy kite. Once fixed securely I embedded the branch in the ground at an angle & close enough to benefit from the heat of the fire 🔥 thus cooking the fish. I served mine with lime juice, salt n pepper & chipotle chilli 🌶 ketchup. #foraging #wildfood #summer #ontheroad #cornwall #mackerel #parnassing #cooking #fire

Excellent day yesterday on the Foraging, Food & Deaths Door Gin event. Despite the heaviest day of rain in the past 6 weeks, no one's spirits (no pun intended) were dampened. A leisurely 2.5 hour foraging walk introducing folk to the seasonal delights of; green figs, mugwort, meadowsweet, hogweed seeds, hazel, wild carrot, yarrow, common sorrel, himalayan balsam flowers, burdock, rowan berries & garlic mustard seeds before heading off to https://viceandvirtueleeds.co.uk/ in c...entral Leeds, for a DD drinks masterclass, presented by Selena (brand ambassador). This was followed by a great 3 course meal & cocktails pairing which included many of the days foraged ingredients. Given that the V&V Chefs had a full service in operation & only 1.5 hours to prepare the meal (including canapés & take home treats) the creativity shone through very nicely indeed. For me, it's very exciting & satisfying to be served food & drinks that include foraged ingredients picked literally hours prior to serving (now that's fresh & local & all were mindfully harvested). To be able to sit down & relax (I'm usually the one prepping/cooking either in a woodland, field or kitchen), dine alongside the days participants, to hear their comments regarding those wild flavours & the creative culinary style presented in, reinforces the reasons, messages, connections I'm always teaching, discussing, introducing & exploring with folk. Hats off to Luke Downing (V&V - great to meet you at last) & Jonathan Hawthorne (V&V & of XO Supperclub renown) for creating such a delicious meal. Straining off the solid ingredients from one of the natural wild brews: green pine cone, douglas fir & rhubarb with later additions of wild raspberry, meadowsweet, mugwort, blackcurrent & purple rosehip. Has good ferment, needs a few more days of sugar to alcohol conversion to balance the slight over sweetness at this stage, other than this (which is perfectly natural at this stage) its a very promising brew with a lovely flavour & colour. Had a fantastic day at Fairburn Ings RSPB Nature Reserve today assisting with Bioblitz 2018 "Nature Reserves Are Not Enough". Bioblitz is a ten day intensive observation of the UK's wildlife at selected nature reserves. Helping with the documentation at each site are various wildlife experts, enthusiasts & members of the public, all these people will help identify & document a range of plants, insects, grasses, fungi, trees, birds, mammals etc. The project was initiated & spe...arheaded by Chris Packham (The Really Wild Show, Springwatch etc). Chris is an avid ambassador, advocate, teacher & campaigner of wildlife, nature & the environment & he, like many others (experts/enthusiasts/public) are worried about the state of the wildlife in this country as well as globally. If any one reading this isn't worried, I think it's about time you were. Anyway, the detailed recordings that will take place across 50 of the nations nature reserves will hopefully give us a clearer picture of the state of the wildlife, showing the successes & failures of nature conservation. Nature reserves can be havens for a wide range of wildlife species but nature reserves aren't enough, wildlife needs more space to thrive & flourish & it needs a healthy environment to do so: humans do too, we are also a species & part of that wider wildlife - our strange & current affliction of believing we are superior to nature will only lead us further down the dismal path we are already traversing, we have a responsibility to look after, assist & enable nature & ourselves to thrive in mutual harmony & balance). It was so good to see so many people at Fairburn Ings today, it was even better seeing so many people connecting with nature, sharing their love, passion, skills & knowledge for such an important & vital project. From my perspective, there were good points & bad points, I need some time to ponder my experiences, for a variety of reasons - I hope that last sentence doesn't blur, for those of you reading this, what was a very positive experience overall. Any negatives from this project will lead to positive solutions. Big thanks to Sally Granger at RSPB Fairburn Ings for inviting me along to share my knowledge of plants & enable me to assist with this project. Well done to everyone that showed up, worked & assisted on such a hot day too. Amazing energy & vibe, an uplifting experience for sure. I also saw my first ever real life Spoonbill! This once popular bird was missing from the UK wildlife scene for approx just over 300 years! They have nested & successfully reared chicks at Fairburn Ings in 2017 & now 2018! Ace :)

Meadowsweet... From hedgerow, to house, fresh to dried, aromas of vanilla, hay, tonka bean; heady n dreamy... One of the 3 sacred herbs of the Druids (apparently). I often wonder why that was so, what were the reasons, the links; ceremonial, social, political... I also think about the wording & connections in nature & brewing & the druids; mead-sweet, meadowsweet, mead, honey, bees, mead-ows (edges full of meadowsweet & the remain inner areas swift with wild meadow flowers & ...various pollens, nectars... Maybe the source of that wisdom will come in the form of synchronistic thought flow the more I muse, connect & understand, intuitively or other. The flowers form in gradual stages, from bottom upwards, this makes for gradual gatherings, make hay while the sun shines, once its gone its gone but remember to leave some to seed #foraging #wildfood #summer #meadowsweet #flowers #yorkshire #edibleleeds

Apricots, Honey Suckle Flowers, Cinnamon, Maple Syrup. Local greengrocer in Barnoldswick is getting some stunning fruit produce, these apricots are better than any I've ever tasted, anywhere. The Sindhi Mangoes are off the scale taste wise & his Medjool Dates, the plumpest, stickiest, mmmm.... Anyway, this flavour combo popped into mind & I've preserved in jars... Totally not the season for hare but got the craving & trying to make way through the game meat in the freezer, as well as trying some dishes I'm thinking of serving at pop up dining events come the right season. On The Road Fizz take 1... A naturally fermented wild alcoholic brew started in #scotland approx 10 days ago. Ingredients: Honeysuckle, Elderflower, Wineberries, Meadowsweet, Pineapple Weed, Mugwort, Yarrow & Bog Myrtle. It was a slow start ferment but these types of fermentation can be, relying on adequate temperatures (not too hot nor too cold) & of course yeasts. I did add a touch of my exceptionally lively & pokey naturally brewed fizz of Elderflower, Japanese Rose, Cherr...ies 🍒 & Mugwort to add extra zip & yeast colony approx 2 days ago (necessary but I did). It would be interesting to examine the yeasts of the lively brew, or at least have taken a recording of the SG & FG to gauge exact % ratio, as after 3 or so weeks it is rather alcoholic. Despite brewing naturally wild yeast fizzes for several years now (purposefully & consciously so - I've inadvertently brewed cordials & syrups in the past) I was under the impression that they never reached a particularly high alcohol content (ie 2% - 5%) hearing in the past that wild yeasts cannot withstand high ethanol counts, this is not the case it seems (also, those brews rarely lasted long being supped pretty quickly). The recent purchase of The Wildcrafting Brewer by @pascalbaudar has also informed me otherwise. The Sacred & Herbal Healing Beers book by Stephen Harrod Buhner does explore ancient & primitive brews but doesn't go into as much personal experiment info as Pascals - both books are excellent in their own rights btw. I'm going to push the fermentation stage as far as possible with this one to see how pokey it gets & how far ferment lasts before all sugar is converted. Went on Craigs spring forage walk last weekend and what a delight it was! I was amazed at how many plants/herbs/weeds etc all around us are not only edible but delicious/free and fun to learn about and some of the most nutritious foods around..like nettles!!! :- D

Throughly enjoyed myself..wish I had taken a dictophone as Craig information was vast. Then had a 3 course meal cooked up by the river bed..the freshest and most tasty salad imaginable. Took my family on the same walk the following day. Wanted to learn about wild food for long enough.

I'm happy with plant ID but I've always been scared to pick any mushroom at all, but now I've got my eye in for what I need to look for, a taste for fresh wild mushrooms and a couple of book recommendations for the Christmas list to be going on with! The group was friendly, the harvest was plenty and cooking the mushrooms was the perfect end to the walk. I was a complete beginner but left feeling confident I can now go out and forage I would highly recommend this walk to anyone with a passion for the outdoors and shrooooms!!

Excellent little introduction to a few edible treats today at Preston Park. Many thanks to Craig who was really informative and really good with the mixed ages of children present. It was great to return to the museum kitchen to sample some of our finds! Highly recommend.

Brilliant, lovely day today in and around Lindley. Really relaxed, fun walk with lots of stopping, picking, snacking, culminating in a fabulous foraged meal. I learned loads but above all I had such a great day just forgetting everything and taking in the sights, sounds, plants, wildlife.



And I have a lovely garlic/ aniseed aftertaste!

I already knew a little bit about foraging but there is nothing like being shown the plants in person by an experienced and passionate forager, and I now feel a lot more confident identifying local spring plants. It's always been my dream to learn about Mushroom picking. And Craig definitely the right man for teaching you about it- friendly, knowledgeable, easy to follow, and not a bad chef ;) We had a such wonderful day out and will definitely be back for a spring section!

Had a fantastic time on the fungal forage today. The walk was very well organised and Craig was teeming with knowledge. The group was friendly, the harvest was plenty and cooking the mushrooms was the perfect end to the walk. I was a complete beginner but left feeling confident I can now go out and forage I would highly recommend this walk to anyone with a passion for the outdoors and shrooooms!!

Excellent little introduction to a few edible treats today at Preston Park. Many thanks to Craig who was really informative and really good with the mixed ages of children present. It was great to return to the museum kitchen to sample some of our finds! Highly recommend.

Brilliant, lovely day today in and around Lindley. Really relaxed, fun walk with lots of stopping, picking, snacking, culminating in a fabulous foraged meal. I learned loads but above all I had such a great day just forgetting everything and taking in the sights, sounds, plants, wildlife.



And I have a lovely garlic/ aniseed aftertaste!

A very enjoyable and informative walk! I already knew a little bit about foraging but there is nothing like being shown the plants in person by an experienced and passionate forager, and I now feel a lot more confident identifying local spring plants. Thanks Craig! PS My daughter has been introducing her friends to sorrel!!

Went on Craigs spring forage walk last weekend and what a delight it was! I was amazed at how many plants/herbs/weeds etc all around us are not only edible but delicious/free and fun to learn about and some of the most nutritious foods around..like nettles!!! :- D

Throughly enjoyed myself..wish I had taken a dictophone as Craig information was vast. Then had a 3 course meal cooked up by the river bed..the freshest and most tasty salad imaginable. Took my family on the same walk the following day. Wanted to learn about wild food for long enough.
