This ferment is almost dry. This little pump over will integrate oxygen into the fermenting wine to help the yeasts to finish their job of eating all the sugars. Look at the colour of this bad boy. This is from a block in Bannockburn. It's as elegant as they come.

It's all go here in Central Otago, NZ. Our wines are starting to ferment and will bubble away until dry. The fruit coming in is great and flavours are wonderful. Two more vineyard blocks to pick and that'll be it for this year. Happy to say that the 2017s are on their way to The Sipster and will be available for purchase in late June in small amounts.

Hi Guys, It's Brian here from The Sipster. I'm off on a long trek to New Zealand for vintage 2019. I'll be working alongside Alan Brady as we craft our 2019 Wild Irishman Pinot Noir. Alan is originally from Co. Down and headed out as a TV news presenter in the late 70s. He bought a small piece of land in Gibbston Valley where he planted the first grapes in the region and set up the first commercial winery at the time, Gibbston Valley Wines. I met him in 2013 and he became my ...winemaking mentor. I owe him a lot and am proud to working alongside him at Wild Irishman. Keep checking out this page for full video updates from the harvest. It's going to be a full on 5 weeks. I just need to get these 5 flights nailed first. 1 down, 4 to go.
